My boys love this corn with fried catfish, baked ham or chicken. It is really good.

Ingredients

  • 2 tablespoons butter
  • 1 cup butterich crackers (i like townhouse)
  • 2 - 12 oz cans of shoepeg corn with peppers, drained
  • 4 slices swiss cheese, torn
  • 1/2 cup heavy cream
  • 1/2 teaspoon onion powder
  • - fresh cracked black pepper
  • - salt if needed

How To Make skillet scalloped corn

  • Step 1
    Melt butter in a skillet over medium heat. Add 4 T of cruhed crackers. Stir until brown and sdet aside. In same skillet add remaining ingredients, stirring frequently until cheese melts. Transfer to serving dish top with buttered craccker crumbs and serve.
