I got this recipe from Jenny Lynn Curry. It is low carb but regardless if you are following that diet or not this is wonderful.

Ingredients

  • 1/2 half a head of green cabbage
  • 1 pound pastrami or corned beef
  • 12 ounces avocado oil mayo
  • 1/2 pound swiss cheese
  • 1/2 cup dill pickles
  • 2 teaspoons bragg apple cider vinegar
  • 1 teaspoon swerve

How To Make reuben slaw keto

  • Step 1
    cut 1/2 head of cabbage in half and julienne
  • Step 2
    Cut the pastrami into 1/4 inch strips
  • Step 3
    Cut the Swiss cheese into roughly 1/4 inch strips
  • Step 4
    Dice up the dill pickles
  • Step 5
    Mix the mayo, Apple cider vinegar, swerve and pickles in a bowl.
  • Step 6
    In a large mixing bowl mix the cabbage with the dressing.
  • Step 7
    Then add the cheese and pastrami in and mix well.
  • Step 8
    Serve either right away or store in the fridge for up to 2 to 3 days.
