mushroom and barley pilaf

I think barley is one of those foods that most people don't really give a lot of thought to. It's such a great food. This is a great recipe to enjoy this awesome legume.

Ingredients

  • 2 cups fresh, sliced mushrooms
  • 4 - green onions, sliced
  • 1 medium carrot, shredded
  • 1/8 teaspoon garlic powder
  • 1 tablespoon butter or margarine
  • 14 ounces chicken broth
  • 1-1/2 cup quick cooking barley
  • 1/2 teaspoon sage
  • 1/4 teaspoon black pepper
  • 1 - 6 oz. package snow pea pods

How To Make mushroom and barley pilaf

  • Step 1
    In a medium saucepan, melt the butter or margarine over medium heat.
  • Step 2
    Add mushrooms, green onions, carrot and garlic powder and heat until mushrooms are tender. Stir in chicken broth. Add barley, sage and pepper. Bring to boiling. Reduce heat. Cover and simmer for 15-18 minutes or until barley is tender and liquid is absorbed.
  • Step 3
    Meanwhile, place frozen pea pods in colander and run cold water over them for 1 or 2 minutes, until thawed. Drain.
  • Step 4
    Stir pea pods into the barley mixture. Cover. Let stand for 2-3 minutes or until heated through. (Pea pods will be nice and crispy!)
  • Step 5
    Transfer to serving bowl.
