microwave bread and butter pickles

These are so good and so easy (two of my favourite things!) I make a quart or two every month, especially during the summer.

yield makes 1 quart

Ingredients

  • 1/2 teaspoon salt
  • 1/4 teaspoon turmeric, ground
  • 1/4 teaspoon mustard seed
  • 1/4 teaspoon celery seed
  • 1/2 cup vinegar
  • 1 cup sugar
  • 2 - cucumbers, unpeeled & thinly sliced
  • 1 or 2 - onions, thinly sliced

How To Make microwave bread and butter pickles

  • Step 1
    In a small bowl combine first 6 ingredients.
  • Step 2
    Mix cucumbers & onions in a large microwave-safe bowl. Pour vinegar mixture over cucumbers & onions. Microwave, uncovered, on high power 5 minutes. Stir well, microwave another 5 minutes. Cool, then pour into a quart jar and refrigerate.
  • Step 3
    Pickles are ready to eat in 24 hrs, when thoroughly chilled. Keep refrigerated. Will stay fresh for several weeks.
