These are so good and so easy (two of my favourite things!) I make a quart or two every month, especially during the summer.

Ingredients

  • 1/2 tsp
    salt
  • 1/4 tsp
    turmeric, ground
  • 1/4 tsp
    mustard seed
  • 1/4 tsp
    celery seed
  • 1/2 c
    vinegar
  • 1 c
    sugar
  • 2
    cucumbers, unpeeled & thinly sliced
  • 1 or 2
    onions, thinly sliced

How to Make Microwave Bread and Butter Pickles

Step-by-Step

  1. In a small bowl combine first 6 ingredients.
  2. Mix cucumbers & onions in a large microwave-safe bowl. Pour vinegar mixture over cucumbers & onions. Microwave, uncovered, on high power 5 minutes. Stir well, microwave another 5 minutes. Cool, then pour into a quart jar and refrigerate.
  3. Pickles are ready to eat in 24 hrs, when thoroughly chilled. Keep refrigerated.
    Will stay fresh for several weeks.
