- 1/4 cup lemon juice
- 1 teaspoon minced garlic
- 1 teaspoon olive oil, extra virgin
- 1 teaspoon dried lemongrass
- 1 pinch cracked black pepper
- 1 cup shelled edamame
- 1 cup collard greens
- 1 cup cauliflower, cooked

Step 11. In a medium-sized saucepan, prepare quinoa as instructed by package (typically 2 cups boiling water, cover and simmer for ~20 minutes) 2. Add oil, garlic, garlic salt (to taste), pepper, lemon juice and lemon grass. 3. Stir in collard greens, edamame, and cauliflower. Cook covered, on low, for an additional 5-10 minutes, or until all liquids have been absorbed by the quinoa.
