11. In a medium-sized saucepan, prepare quinoa as instructed by package (typically 2 cups boiling water, cover and simmer for ~20 minutes)
2. Add oil, garlic, garlic salt (to taste), pepper, lemon juice and lemon grass.
3. Stir in collard greens, edamame, and cauliflower. Cook covered, on low, for an additional 5-10 minutes, or until all liquids have been absorbed by the quinoa.
