These beans are our fave's. There is quite a history in these beans. These beans were extinct. An archaeologist discovered them in a basket while working a dig at Mesa Verde and tried to grow them. He had great success with them, so people started farming them in Doloris CO. They started selling them in the Gourmet areas of the grocery store or you can buy them by the gunnysack in Farmington NM or Doloris CO, Aztec NM, Dove Creek CO. Ingredients
- 2 pounds anasazi beans
- 1/2 cup onion (chopped)
- 1/2 pound bacon (cut up)
- 2 cans green chiles (chopped)
- 2 cans rotel (tomato's, green chili, garlic)
- 2 medium zucchini (sliced)
- 2 teaspoons garlic
- 2 teaspoons salt
- 2 teaspoons italian seasoning

How To Make anasazi beans

Step 1Using a pressure cooker....Cook 1 hour...if cooking in Dutch Oven cook 5 hours same if cooking in Crock Pot.

Step 2Sort and beans, place into Pressure Cooker, add all ingredients, fill cooker to about 1 1/2 inch from screws at top of cooker. You have to give it room to swell. You can soak over night if you are cooking other than pressure cooker. Cook 1 Hour...
