Ths is the epitome of holiday stuffing. It's one of my favorites.

1 pound loaf country style bread, cut inyo 1/2" cubes
8 Tbsp
unsalted butter
2 large
onions, finley chopped
celery ribs, with some leaves, finely chopped
2 large
granny smith apples, cored and diced
1 tsp
dried sage
1 tsp
dried thyme
1/2 tsp
salt and pepper to taste
1 c
dried cranberries
1/3 c
minced parsley
1-1/2 c
lower-sodium chicken broth, heated

How to Make Apple and cranberry stuffing


  • 1Heat oven to 325. Spread bread on 2 jelly-roll pans. Bake, stirring a couple of times, for about 20 mins. Reserve. Spray a 4-quart baking dish w/ cooking spray. In lg skillet over medium heat, melt 2 tbsp butter. Add onions and celery. Saute, stirring, untill softened, about 10 mins. Transfer to lg bowl.
  • 2Return skillet to medium heat, add 1 tbsp butter. Add apples, saute until glazed and brown. Add apples to onion mix. Stir in sage, thyme and nutmeg. Add salt and pepper to taste.
  • 3In same skillet, melt remaining butter over medium heat. Stir in cranberries, parsley and reserved bread. Add to apple mix, toss to blend. Moisten w/ broth, 1/2 cup at a time, stirring to mix. Transfer stuffing to baking dish. Cover lightly w/ foil, bake 40 mins. Uncover and bake about 20 mins, or until browned and crisp on top.
