Ingredients For caramelized onion hummus

  • 1 Tbsp
    extra virgin olive oil (+ more, if you want to top the hummus with a drizzle of extra virgin olive oil)

    large yellow onion, peeled and sliced thinly
  • 1
    15-oz can of garbanzo beans (chickpeas), drained (reserve the brine)
  • 3 Tbsp
    tahini paste
  • 3-4 clove
    garlic, peeled
  • 2-3 Tbsp
    lemon juice
  • 1 tsp
    salt
  • 1-2 dash
    cayenne
  • 2-4 Tbsp
    garbanzo bean (chickpea) brine -- the reserved liquid from the can

How To Make caramelized onion hummus

    Heat olive oil in a large skillet over medium heat; add onion slices and cook for approximately 40 minutes, stirring occasionally. Allow them to cool slightly while you prepare the rest of the ingredients. (I season the onions with a pinch of salt while they cool.)

    Add all remaining ingredients (except reserved brine) and most of the caramelized onions to the bowl of your food processor. Process ingredients until smooth, adding reserved brine until you have reached your desired consistency.

    Garnish with remaining caramelized onions & a drizzle of extra virgin olive oil, if desired. Serve with pita chips, crackers, chips or veggies. Can also be used as a sandwich spread.
