My mom was from Germany and did a lot of authentic German baking. One of the ingredients she'd use was Vanillezucker. It came in little packets that you could buy at the store. In the cookbooks I've inherited from her, there are lots of recipes that call for it instead of using vanilla extract, as we do in the US. Here is a way to make your own vanilla sugar. You can use a couple of teaspoons of this as part of the sugar called for in your recipe and skip the vanilla extract. Add more sugar when your supply gets low - the vanilla is hearty enough to flavor several batches.

Ingredients
- 2 cups granulated white sugar
- 2 - 3 whole vanilla pods
How To Make vanilla sugar

Step 1Place sugar in a container with a tight fitting lid.

Step 2Cut the vanilla pods into 3 or 4 pieces. Add to sugar. Cover and shake to make sure the vanilla is immersed into the sugar.

Step 3Keep closed in a dark cupboard for at least 2 weeks. Then you can use in German recipes or add to any other recipe you want to make.
