I will admit, it is unquestionably easier to just buy this stuff at the store, and if you have a favorite Italian seasoning mix that you enjoy, then stick to what you like. This dry spice has the usual ingredients with a few additions that my Aunt Josephine used to add, and to me it made all the difference. As with all homemade spices, you can play a bit with the recipe to get exactly the flavors you are looking for. I never got around to getting the “exact” proportions from my aunt, but I think this is rather close. So, you ready… Let’s get into the kitchen.

- 1 tablespoon parmesan cheese, finely grated
- 1 teaspoon dried thyme

- 1/2 teaspoon onion powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried sage
