blueberry basil vinegar
I can't take credit for this recipe. It comes from my local extension office at UAF (University of Fairbanks, Alaska) I love, love, love berry vinegars and this one is very good. Use it for everything from marinades to barbecue sauce, to salad vinegrette. Yeah, it takes a little time to marry the flavors but it is worth it. I made some seriously good barbecue sauce with this and will serve with moose chicken fried strips tonight.

Lots......1.5 quarts...that's a lot of bottles. Give them as gifts like I did.
Ingredients
- 4 cups blueberries
- 4 cups rice wine vinegar, (divided)
- 1 cup basil, chopped
- large lemon zest, grated
How To Make blueberry basil vinegar

Step 1Smash 4 cups blueberries with 1 cup vinegar (using a potato masher)

Step 2Add basil, lemon zest and 3 more cups vinegar.

Step 3Cover with plastic wrap and store in a cool place. Stir every day for 4 weeks.

Step 4Bottle and cork. This is great stuff!
