Beets are true nutritional superstars that are high in immune boosting Vitamin-C, fiber, potassium, and bone-building manganese. I try to encourage my daughter to eat these incredible root vegetables by pairing them with fresh, juicy strawberries and chia seeds. The outcome: easy and beet-iful Super Strawberry Jam. It's perfect for spreading on toast or giving a powerful nutritional-boost to peanut butter and jelly sandwiches!

Ingredients

  • 1/4 cup roasted, shredded beets
  • 2 1/2-3 cups fresh sliced strawberries
  • 3 tablespoons ground chia seeds
  • 5 tablespoons pure maple syrup (or as much as desirable)

How To Make super strawberry jam

  • Step 1
    Place all the ingredients in a small blender. Puree until smooth and then, transfer to a small jar with a lid. Refrigerate for at least a few hours, best overnight. Enjoy!
  • Step 2
    Note: To roast beets, wrap washed beetroots in aluminum foil. Create a foil packet by folding the foil over beets and crimping the sides closed. Place the packet into the oven, at 375° F for about 40-45 minutes, or until the beetroots can be easily pierced with a fork.
