I have started making recipes that called for molasses, come to find out I had no molasses. This is one way to never run out of molasses. Oh yes it is great on toast or biscuits

Ingredients
- 15 pounds green tomatoes
- 5 pounds dark brown sugar
- USE ONLY DARK BROWN SUGAR
How To Make green tomato molasses

Step 1Layer thin slices of green tomatoes and DARK brown sugar in a large roaster. Keep layering he tomatoes and DARK brown sugar until you have used all the DARK brown sugar. The top layer must be DARK brown sugar. Put on lid and set aside over night.

Step 2Next day squeeze out juice from tomatoes. Strain through a nylon footie or a jelly bag. When strained into a heavy kettle boil on medium heat until reduced by half. This will take some time.

Step 3Be sure liquid does not( scorch or burn). When to the syrup stage, pour into sterile jar's and seal, Let cool. This taste like old fashion molasses and can be used in any recipe calling for molasses.

Step 4This is a good way to use up those green tomatoes. Seal in pint jars, and water bath in boiling water for 10 to 15 minutes.
