cucumber salad dressing with avocado
I found a dressing, that I changed to my liking. I wanted good homemade cucumber dressing. And, I decided that the avocado would be a good ingredient. Can also be used as a dip or guacamole! Very healthy. Chill time is not included in prep time. Photo by friend & member Wiley P.

Ingredients
- - chill time is not included in prep time
- 1/4 to 1/3 cup olive oil
- 1-2 clove garlic, minced or garlic powder, 1/4 to 1/2 tsp. or to taste
- 1 medium cucumber, peeled, seeded, and chopped
- 1/2 cup fresh parsley or cilantro
- 2 medium avocados, scooped out, cut in chunks
- 1/4 cup fresh lemon juice
- - salt, to taste
- - ground pepper, to taste (preferably white)
How To Make cucumber salad dressing with avocado

Step 1Blend olive oil and garlic, in a blender, until smooth. Add remaining ingredients, except salt and pepper. Blend again, to puree consistency. Add, salt and pepper, as needed & pulse a few times. Chill at least 1 hour.
