pickled okra salsa
So I LOVE pickled okra! Delish salsa bites? Yes, please! So I got a little crazy and wondered what a "Pickled Okra Salsa" would be like... The answer is: SALSA HEAVEN. I used mild okra for this batch but the spicy is total heatwave nirvana too! Pair this with super cheesy chicken nachos, and slice extra okra to use as garnish in place of (or in addition to) jalapeno slices. Your spiciest, most disco taste buds will thank you!!

Makes about 3 cups
Ingredients
- 1/2 large shallot, roughly chopped
- 1 handful of cilantro leaves
- 2 cups tomatoes, roughly chopped, i used rainbow snacking tomatoes
- 1/2 cup okra pickles, mild or spicy, your choice, cut each piece into thirds
- 1/4 - 1/3 cup pickled jalapeno slices
- 1 1/2 tablespoons lime juice
- 1 1/2 teaspoons salt
How To Make pickled okra salsa

Step 1Put shallots and cilantro into a food processor and pulse until finely chopped.

Step 2Add tomatoes, okra, jalapeno, lime juice, and salt. Pulse all ingredients until you reach your desired consistency. (I prefer a chunkier texture but that's just me.)
