This is good with poultry , pork or tortilla chips, a little spicy to WOW your taste buds- but you can tone it down to your liking, if you are not a traditional salsa lover.

Ingredients

  • 1 1/3 cups frozen unsweetened tart cherries
  • 1/4 cup coarsely chopped dried tart cherries
  • 1/4 cup finely chopped red onion
  • 1 tablespoon diced jalapeños, i use ortega
  • 1 clove garlic, finely chopped
  • 1 tablespoon chopped fresh cilantro, or 1/2 teaspoon dried
  • 1 teaspoon cornstarch

How To Make cherry salsa

  • Step 1
    Coarsely chop frozen cherries in blender. Let cherries thaw and drain, reserving 1 Tablespoon cherry juice.(make any leftover juice into ice cubes for your drinks). When cherries are thawed, combine with the dried cherries, onion, peppers, garlic and cilantro in a medium saucepan; mix well. Combine reserved Tablespoon of juice and cornstarch in a small bowl; mix until smooth. Stir into cherry mixture. Cook, stirring constantly, over med-hi heat until mixture is thickened. Let cool. Serve with tortilla chips and or cooked chicken or pork.
