1 1/3 cfrozen unsweetened tart cherries
1/4 ccoarsely chopped dried tart cherries
1/4 cfinely chopped red onion
1 Tbspdiced jalapeños, i use ortega
1 clovegarlic, finely chopped
1 Tbspchopped fresh cilantro, or 1/2 teaspoon dried
How to Make Cherry Salsa
- Coarsely chop frozen cherries in blender. Let cherries thaw and drain, reserving 1 Tablespoon cherry juice.(make any leftover juice into ice cubes for your drinks). When cherries are thawed, combine with the dried cherries, onion, peppers, garlic and cilantro in a medium saucepan; mix well. Combine reserved Tablespoon of juice and cornstarch in a small bowl; mix until smooth. Stir into cherry mixture. Cook, stirring constantly, over med-hi heat until mixture is thickened. Let cool. Serve with tortilla chips and or cooked chicken or pork.
