Avocado Feta Salsa

This salsa has become a family favorite, with the richness of avocado, and the bright tangy flavor of the feta and herbs. Add more or less of any ingredient to suit your tastes.

Ingredients

  • 2
    plum tomatoes, chopped
  • 1
    avocado, chopped
  • 1/4 c
    finely diced red onion
  • 1 clove
    garlic, minced
  • 1 Tbsp
    chopped fresh parsley (or 1 tsp dry)
  • 1 Tbsp
    chopped fresh oregano (or 1 tsp dry)
  • 1 Tbsp
    red wine vinegar
  • 4 oz
    feta cheese, crumbled

How To Make

    Combine all the ingredients, except feta, stirring gently to mix.

    Add feta cheese, folding in gently.

    Cover and chill 2 - 6 hours. Give a final stir before serving.

    Serve with pita or tortilla chips.
