Ingredients
- 2 - plum tomatoes, chopped
- 1 - avocado, chopped
- 1/4 cup finely diced red onion
- 1 clove garlic, minced
- 1 tablespoon chopped fresh parsley (or 1 tsp dry)
- 1 tablespoon chopped fresh oregano (or 1 tsp dry)
- 1 tablespoon red wine vinegar
- 4 ounces feta cheese, crumbled

Step 1Combine all the ingredients, except feta, stirring gently to mix.

Step 2Add feta cheese, folding in gently.

Step 3Cover and chill 2 - 6 hours. Give a final stir before serving.
