condiment essentials: sweet/sour cranberry sauce

I love this sauce when I want a sweet/sour taste, and I do not want to use regular ketchup. This is an awesome substitute for a meatloaf, or anywhere where you want a departure from traditional ketchup. So, you ready… Let’s get into the kitchen.

Ingredients For condiment essentials: sweet/sour cranberry sauce

  • PLAN/PURCHASE
  • 8 oz
    fresh cranberries
  • 2 oz
    yellow onion, chopped
  • 1 1/2 c
    apple cider
  • 4 Tbsp
    balsamic vinegar, plain variety
  • 3 Tbsp
    fresh clover honey
  • 1 pinch
    cinnamon, or to taste
  • 1 pinch
    cardamom, or to taste
  • 1 pinch
    salt, kosher variety, or to taste
  • 1 pinch
    crushed pepper flakes
  • white pepper, freshly ground, to taste

How To Make condiment essentials: sweet/sour cranberry sauce

    Chef’s Note: You have two choices here… You can use plain apple cider to create a very mellow ketchup. Or you can use apple cider vinegar to create a sauce that will knock your socks off… up to you. I use apple cider with things like meatloaf, and burgers. I use apple cider vinegar with things like smoked meats, such as: ribs and pork.

    Gather your Ingredients (mise en place).

    Add the cranberries, onions, and apple cider to a saucepan, over medium heat.
  • 5
    Bring up to a simmer, and cook until the cranberries have softened, and begin to pop open, about 10 – 12 minutes.

    Place the cooked cranberries/onions into a food processor, fitted with an S-Blade.

    Blend on high speed until the ingredients are smooth.

    Return the blended cranberries/onions back into the saucepan, and add the remaining ingredients.

    Combine, and slowly simmer until the mixture thickens, about 12 – 18 minutes.

    Place into a non-reactive container (glass), and put into the fridge until ready to use.

    This sauce is great for a classic meatloaf (in place of regular ketchup), or in any dish where you want a change from ketchup. Enjoy.
