butterscotch sauce - mmmgood! paul said

A recipe from the old file box in a friend's handwriting, given to my mom. It says it's "a famous name recipe". Since we had gingerbread with butterscotch sauce this past week, I've been thinking of making both gingerbread and this sauce. It was served with vanilla ice cream, and the gingerbread was unlike any I've had before. It was like a poundcake but highly seasoned with spices, and it was not the color of gingerbread as I remembered it. Served with ice cream this sauce is really great!

Ingredients

  • 2/3 cup white corn syrup
  • 1 1/2 cups light brown sugar
  • 1/3 cup water
  • 4 tablespoons butter, cold
  • 1/4 teaspoon vanilla extract
  • 6 tablespoons heavy cream

  • Step 1
    Place the first four ingredients in a sauce pan, stir and bring to a boil. Watch and stir frequently, as it can boil over! Continue until it is smooth, frothy and reaches a "soft ball stage" or is thickened to a heavy syrup.
  • Step 2
    Cool and then add the vanilla and heavy cream. Stir well. Serve either warm or cold.
