I love my mom's apple jam. Eating it by spoonfuls or spreading it on a piece of crusty bread, to me, it's always a sweet treat reminiscent of my childhood. But the labor-intensive process that turns bags of apples into rows of canned goods stops me from following my mother's culinary footsteps. What modern mom has time for canning apples? I don't. I prefer more effortless method: throw all the ingredients into a blender, puree, taste, and refrigerate. It's that simple. Plus, with the addition of super chia seeds, this jam is not only child's play to make, but a true nutritional champion!

Ingredients

  • 2 - tart apples, peeled, cored, and diced (about two cups)
  • 1/2 teaspoon freshly grated lemon peel
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon apple pie spice (or substitute cinnamon)
  • 3 tablespoons raw chia seeds
  • 2 tablespoons light agave nectar

    Place all the ingredients in a small blender. Puree until smooth and transfer to a small jar with a lid. Refrigerate for at least a few hours, best overnight. Enjoy!
