Use a combination of tart and sweet apples. Don't use red delicious (too mealy).

Ingredients

  • 6 medium apples, peeled, cored and cut into 1/4-inch wedges
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 stick cinnamon (or 1/8 teaspoon ground)
  • 1 - 4-inch strip lemon peel

How To Make applesauce (pressure cooker)

  • Step 1
    In a 6 quart stovetop pressure cooker, combine all ingredients. Lock lid in place.
  • Step 2
    Bring to high pressure over high heat. Immediately remove from heat and quick-release pressure.
  • Step 3
    Open lid. Discard cinnamon stick (if using) and lemon peel.
  • Step 4
    Stir to break up apple pieces. Return to heat, uncovered, until applesauce is desired consistency.
