Summer Essentials: Lemon Vinaigrette

This dressing is what I would call the essence of Summer. It is light and flavorful, and goes amazingly well, on a plate of fresh Summer garden greens. Make sure that your lemon juice is freshly squeezed, and the champagne vinegar can be found at most grocers. No refrigeration is necessary, and if you can allow it to rest overnight before using, you will not be disappointed.

So, you ready… Let’s get into the kitchen.

  • 3 Tbsp
    lemon juice, freshly squeezed
  • 1 Tbsp
    champagne vinegar
  • 2 clove
    baked garlic, smashed
  • 1 medium
    shallot, chopped
  • 1/3 c
    olive oil, extra virgin
  • ·
    salt, kosher variety, to taste
  • ·
    black pepper, freshly ground, to taste

  2. If you have never experienced the wonderful flavor of baked garlic, you are in for a treat. Here is a recipe for baked garlic:

  3. Gather your Ingredients (mise en place).
  4. Add all the ingredients to a food processor, or blender.
  5. Give several 1-second pulses, until all the ingredients are combined.
  6. Place into a glass container, fitted with a tight lid. No refrigeration is necessary.
  8. Use over a nice plate of garden-fresh salad greens; possibly some fish or chicken. Enjoy.
  9. Keep the faith, and keep cooking.
