Ingredients

  • 2 large
    purple top turnips
  • 1 medium
    apple any variety
  • 1/3 c
    raw dried pumpkin seed
  • 1/3 c
    olive oil
  • 1/2
    lemon
  • DRESSING:

  • 1 Tbsp
    cider vinegar
  • 1 Tbsp
    lemon juice
  • 1 tsp
    dijon mustard
  • 1 Tbsp
    honey or maple syrup
  • 1 tsp
    chopped thyme
  • ·
    salt and pepper to taste

How to Make PURPLE TOP TURNIP AND APPLE SLAW

Step-by-Step

  1. Peel turnips and slice into 1/4 inch slice. Stack slices on top of each other cut as thin as you can into matchsticks. Repeat with unpeeled apple.
  2. Place in a large bowl, and squeeze 1/2 lemon juice over apple so they don't turn brown.
  3. MAKING THE DRESSING:
  4. Combine remaining ingredients( except pumpkin seed ) in a glass jar with a tight fitting lid. Shake until combined.
  5. Mix pumpkin seed, dressing and slaw until combined. Serve chilled.
