Ingredients
- 3 tablespoons grana padano cheese (substitute parmesan), grated
- 2 tablespoons dijon mustard
- 1 tablespoon red wine vinegar
- 1/4 cup extra virgin olive oil
- 1 tablespoon honey
- 1/4 teaspoon dried oregano
- 1/8 teaspoon ground himalayan sea salt
- 1/4 teaspoon freshly ground black pepper, or to taste (i always use mixed peppercorns)
How To Make italian vinaigrette

Step 1In a medium bowl, add cheese, mustard and vinegar. Slowly whisk to mix and emulsify the olive oil – if you go too fast, it won’t combine properly.

Step 2Continue whisking while slowly adding the honey. Season the vinaigrette with oregano, sea salt and freshly ground black pepper. If not using it right away, store in the refrigerator. Makes 2/3 cup
