Quick and easy to make, this tasty homemade Italian Vinaigrette is sure to enhance your green and pasta salad! This can be made ahead of time...

Ingredients

  • 3 tablespoons grana padano cheese (substitute parmesan), grated
  • 2 tablespoons dijon mustard
  • 1 tablespoon red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon honey
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon ground himalayan sea salt
  • 1/4 teaspoon freshly ground black pepper, or to taste (i always use mixed peppercorns)

How To Make italian vinaigrette

  • Step 1
    In a medium bowl, add cheese, mustard and vinegar. Slowly whisk to mix and emulsify the olive oil – if you go too fast, it won’t combine properly.
  • Step 2
    Continue whisking while slowly adding the honey. Season the vinaigrette with oregano, sea salt and freshly ground black pepper. If not using it right away, store in the refrigerator. Makes 2/3 cup
