dressing essentials: summer tomato & honey delight
This dressing is a Summer delight. Nice fresh garden tomatoes, lovingly blended with fresh clover honey, and extra virgin olive oil. The base of the recipe comes from my French dressing; however, I lightened it up with fresh clover honey, and left out some of the heat. It’s light, and perfect for those warm Summer days, when you want something to eat, but you don’t want to heat up the kitchen. How about a nice refreshing salad, and how about this dressing? So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 1/2 cup vegenaise, or plain mayonnaise
- 2 large garden fresh tomatoes
- 1/2 cup fresh clover honey
- 2 tablespoons yellow onion, chopped
- 1/4 teaspoon kosher salt, or to taste
- 1/4 teaspoon white pepper, freshly ground, or to taste
- 1/4 teaspoon smoked paprika
- 1/2 cup olive oil, extra virgin

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Blanch, peel, roughly chop the tomatoes, and drain the excess liquid.

Step 4Add all the ingredients, except the olive oil, to a blender, or food processor fitted with an S-Blade.

Step 5Blend until the ingredients are completely liquefied.

Step 6Chef’s Note: I’m using white pepper; as opposed to black pepper because it has a nice sweet heat.

Step 7Chef’s Note: You can’t over-blend this dressing, so go for it.

Step 8Leaving the blender on high, slowly drizzle the olive oil into the ingredients, until they begin to thicken slightly.

Step 9Chef’s Note: Slowly adding oil in this manner is called creating an emulsion.

Step 10Cover, and place in the fridge overnight before using for the first time.

Step 11Chef’s Note: This dressing will stay fresh in the fridge for 5 to 7 days… that is, if it lasts that long.
