Dressing Essentials: Balsamic, Dijon, Vinaigrette

Andy Anderson !

Had a good friend bring over a bunch of fresh greens and herbs from her garden, so we are doing salads tonight.

I put together a salad bar (greens, tomatoes, carrots, olives, chicken, beef, etc.), they build the salad, and then tell me what kind of dressing they want, and then I try to mix it up.

Of all the combinations of ingredients I stitched together last night, I thought this one stood out.

So, you ready… Let’s get into the kitchen.

  2. The best way to prepare this recipe is with a small prep mixer, or blender. However, you could use a whisk… It will just take a bit more time.
  3. Gather your ingredients (mise en place).
  4. Place the ingredients into a small prep bowl, fitted with an S-blade.
  5. Blend until smooth, and creamy.
  6. Store in a non-reactive container, at room temperature, until ready to use.
  8. Serve as you would any good dressing. Enjoy.
  9. Keep the faith, and keep cooking.
