Love salads in the summer ~ to hot to cook and so healthy for us. This one is very good and different one to whip up ! Hope you enjoy it!!

    head of romaine
  • 1
  • 1
  • 1/2 c
    cashew nuts
  • 1/2 c
    swiss cheese, cubed
  • 1/2 c
    dried cranberries
  • ·
    lemon juice

  • 3/4 c
  • 1/3 c
    cider vinegar
  • 1 tsp
    dry mustard
  • 1 1/2 Tbsp
    poppy seeds
  • 1 c
    olive oil
  • 1/2 tsp
  • 1/2 tsp

How to Make Cranberry Salad / Poppy Seed Dressing


  1. Salad: Cut up romaine. Add rest of ingredients. Toss with Poppy Seed Dressing.
  2. Note: If making ahead of serving, add lemon juice to pear and apple cubes in Ziploc bag. Refrigerate.
