betty's refreshing basil mayonnaise
Light, refreshing - perfect with chicken or seafood to complete a summer's meal. Use to dip crumbed chicken in or thin a little with water and use as a dressing over perfectly cooked fish. Delicious and so easy to make!

Ingredients
- 1/2 cup good quality mayonniase
- 1 clove garlic, crushed (fresh, not bottled)
- 4 teaspoons fresh basil, minced fine (about 18 - 20 large leaves)
- 4 teaspoons freshly grated parmasen cheese
- 1 - 2 teaspoons water (optional)
How To Make betty's refreshing basil mayonnaise

Step 1Combine all the ingredients together in a glass, ceramic or plastic bowl (not metal).

Step 2Mix well and refrigerate for an hour (can be made a day or two ahead of time). If using as a salad dressing, add the water to thin. If using to dip disregard water.

Step 3Keeps for up to 5 days. Makes 2/3 of a cup. "Cook time" is chilling time.
