avocado dressing

I had an avocado that needed to be used. I kept noticing recipes for avocado dressing. Hmm... So I checked some out. I found one that looked interesting and without cilantro. So I started with that and doubled it for starters, since it used half an avocado (??) then added, removed, edited, and fussed with it. LOL. Why bother looking up a recipe in the first place? Mostly for proportion suggestions. What I ended up with is amazing & delicious. I think it will be great on salad, for starters. It might be too loose for a dip, which is something to keep in mind. Just use less water.

Ingredients
- 1 - avocado
- 1 - scallion - white & green parts, chopped
- 2 - limes - juice and zest
- 1 - jalapeno pepper - seeded & minced
- 1/2 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 2/3 cup extra virgin olive oil
- 1 cup water
- 1/2 teaspoon sea salt
How To Make avocado dressing

Step 1Combine all in a food processor & process until smooth. Taste & add more salt if necessary.
