    black beans, drained & rinsed

    pinto beans, drained & rinsed
  • 1 can(s)
    black-eyed peas, drained & rinsed
  • 1 can(s)
    white shoepeg corn, drained & rinsed
  • 2 can(s)
    ro tel w/green chilies, drained
  • 2/3 c
    green onions, chopped
  • 2/3 c
    cilantro, chopped
  • 3-4
    avocados, chopped

  • 1/2 c
    olive oil
  • 3/4 c
    red or rice wine vinegar
  • 2 clove
    garlic, pressed or already minced
  • 1 tsp
  • 1/2 tsp
  • 1 tsp
  • 1 Tbsp
  • 1 c

How to Make Cowboy Caviar


  1. Combine all beans & veggies, except avacado, in a large bowl.
  2. Mix all marinade ingredients; bring to a boil then cool.
  3. Pour marinade over beans & vegetables then stir; gently stir in chopped avacado.
  4. chill 24 hrs. Stir several times.
  5. Can be made the day before to combine flavors. Add the avocados the day you are serving it.
    Serve with tortilla chips or add to Soft tacos..
