Ingredients

  • 1 can black beans, drained & rinsed
  • 1 can pinto beans, drained & rinsed
  • 1 can black-eyed peas, drained & rinsed
  • 1 can white shoepeg corn, drained & rinsed
  • 2 cans ro tel w/green chilies, drained
  • 2/3 cup green onions, chopped
  • 2/3 cup cilantro, chopped
  • 3-4 - avocados, chopped
  • MARINADE
  • 1/2 cup olive oil
  • 3/4 cup red or rice wine vinegar
  • 2 cloves garlic, pressed or already minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon cumin
  • 1 tablespoon water
  • 1 cup sugar

How To Make cowboy caviar

  • Step 1
    Combine all beans & veggies, except avacado, in a large bowl.
  • Step 2
    Mix all marinade ingredients; bring to a boil then cool.
  • Step 3
    Pour marinade over beans & vegetables then stir; gently stir in chopped avacado.
  • Step 4
    chill 24 hrs. Stir several times.
  • Step 5
    Can be made the day before to combine flavors. Add the avocados the day you are serving it. Serve with tortilla chips or add to Soft tacos..
