Ingredients
- 1 can black beans, drained & rinsed
- 1 can pinto beans, drained & rinsed
- 1 can black-eyed peas, drained & rinsed
- 1 can white shoepeg corn, drained & rinsed
- 2 cans ro tel w/green chilies, drained
- 2/3 cup green onions, chopped
- 2/3 cup cilantro, chopped
- 3-4 - avocados, chopped
- MARINADE
- 1/2 cup olive oil
- 3/4 cup red or rice wine vinegar
- 2 cloves garlic, pressed or already minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon cumin
- 1 tablespoon water
- 1 cup sugar
How To Make cowboy caviar

Step 1Combine all beans & veggies, except avacado, in a large bowl.

Step 2Mix all marinade ingredients; bring to a boil then cool.

Step 3Pour marinade over beans & vegetables then stir; gently stir in chopped avacado.

Step 4chill 24 hrs. Stir several times.

Step 5Can be made the day before to combine flavors. Add the avocados the day you are serving it. Serve with tortilla chips or add to Soft tacos..
