black-eyed peas, drained & rinsed

white shoepeg corn, drained & rinsed

ro tel w/green chilies, drained
2/3 c
green onions, chopped
2/3 c
cilantro, chopped
3-4
avocados, chopped

MARINADE

1/2 c
olive oil
3/4 c
red or rice wine vinegar
2 clove
garlic, pressed or already minced
1 tsp
salt
1/2 tsp
pepper
1 tsp
cumin
1 Tbsp
water
1 c
sugar

How to Make Cowboy Caviar

Step-by-Step

  • 1Combine all beans & veggies, except avacado, in a large bowl.
  • 2Mix all marinade ingredients; bring to a boil then cool.
  • 3Pour marinade over beans & vegetables then stir; gently stir in chopped avacado.
  • 4chill 24 hrs. Stir several times.
  • 5Can be made the day before to combine flavors. Add the avocados the day you are serving it.
    Serve with tortilla chips or add to Soft tacos..
