A wonderful layered potato salad to bring to a BBQ.

Ingredients

  • 2 pounds red potatoes, quartered
  • 1/2 cup real mayonnaise
  • 1/2 cup light sour cream
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon each, salt and pepper
  • 4 - hard boiled eggs, peeled, chopped
  • 1/2 cup shredded, cheddar cheese
  • 2 - scallions, sliced
  • 3 - celery stalks, chopped
  • 1/4 cup real bacon bits, i used hormel bacon bits

How To Make summer layered potato salad

  • Step 1
    Place potatoes in lg pot, cover with water. Bring to a boil. Cook until fork tender, about 15 mins. Drain, let cool.
  • Step 2
    Place potatoes in lg serving bowl. In bowl, whisk together mayonnaise, sour cream, garlic powder, salt and pepper. Add 1/2 the dressing to potatoes, stir to combine.
  • Step 3
    Layer potatoes with eggs, then celery, then cheese, then scallions, then bacon bits. Pour remaining dressing over salad. Refrigerate until serving.
