This side dish is like a meal. It's great on a hot day. It has so much flavor.7/19/14.

Ingredients

  • 1 pound orzo pasta
  • 2 tablespoons water
  • 1/2 cup sun dried tomato halfs
  • 1 1/4 cups yellow peppers 1/4" dice
  • 1/4 cup green peppers 1/4" dice
  • 1 cup red peppers 1/4" dice
  • 1/4 bunch fresh parsley, finally chopped
  • 1 bunch scallions, chopped
  • 3/4 cup red onions 1/4" dice
  • 1/2 cup ripe olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon white vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper

How To Make mediterranean orzo

  • Step 1
    Prepare orzo as per package direction. Omitting salt and oil.
  • Step 2
    Cover with vented film, and refrigerate until needed.
  • Step 3
    When the orzo is cold add all the ingredients together in a bowl.
  • Step 4
    Chill for 1 hour and serve
