  • 1 lb
    orzo pasta
  • 2 Tbsp
    water
  • 1/2 c
    sun dried tomato halfs
  • 1 1/4 c
    yellow peppers 1/4" dice
  • 1/4 c
    green peppers 1/4" dice
  • 1 c
    red peppers 1/4" dice
  • 1/4 bunch
    fresh parsley, finally chopped
  • 1 bunch
    scallions, chopped
  • 3/4 c
    red onions 1/4" dice
  • 1/2 c
    ripe olives, sliced
  • 1/2 c
    feta cheese, crumbled
  • 1 Tbsp
    white vinegar
  • 2 Tbsp
    olive oil
  • 1/2 tsp
    black pepper

How to Make Mediterranean Orzo

Step-by-Step

  1. Prepare orzo as per package direction. Omitting salt and oil.
  2. Cover with vented film, and refrigerate until needed.
  3. When the orzo is cold add all the ingredients together in a bowl.
  4. Chill for 1 hour and serve
