Ingredients
- 1 pound orzo pasta
- 2 tablespoons water
- 1/2 cup sun dried tomato halfs
- 1 1/4 cups yellow peppers 1/4" dice
- 1/4 cup green peppers 1/4" dice
- 1 cup red peppers 1/4" dice
- 1/4 bunch fresh parsley, finally chopped
- 1 bunch scallions, chopped
- 3/4 cup red onions 1/4" dice
- 1/2 cup ripe olives, sliced
- 1/2 cup feta cheese, crumbled
- 1 tablespoon white vinegar
- 2 tablespoons olive oil
- 1/2 teaspoon black pepper
How To Make mediterranean orzo

Step 1Prepare orzo as per package direction. Omitting salt and oil.

Step 2Cover with vented film, and refrigerate until needed.

Step 3When the orzo is cold add all the ingredients together in a bowl.

Step 4Chill for 1 hour and serve
