quinoa salad - mediterranean style lisa's version

I love this recipe. Easy to remember and easy to change to your liking. I eat one cup of this on a bed of baby greens.

Ingredients

  • - all organic
  • 4 cups quinoa, cooked and cooled
  • 1/2 large cucumber, diced
  • 1/2 pint grape or other small tomatoes, quartered
  • 1/2 medium red onion, diced
  • 1/4 cup kalamata (greek) olives, quartered
  • 4 ounces feta cheese, crumbled or diced
  • 2 cloves garlic, diced very fine
  • 2 tablespoons bragg's olive oil
  • 2 tablespoons bragg's apple cider vinegar
  • 1/4 cup fresh basil, chopped fine
  • - salt and pepper to taste

How To Make quinoa salad - mediterranean style lisa's version

  • Step 1
    Mix all the above ingredients together in a large mixing bowl. Allow to "marry" overnight.
  • Step 2
    Feel free to adjust ingredients to your liking. This recipe is loaded with good proteins and good fats. Enjoy!
