I love this recipe. Easy to remember and easy to change to your liking. I eat one cup of this on a bed of baby greens.

Ingredients For quinoa salad - mediterranean style lisa's version

  • all organic
  • 4 c
    quinoa, cooked and cooled
  • 1/2 lg
    cucumber, diced
  • 1/2 pt
    grape or other small tomatoes, quartered
  • 1/2 md
    red onion, diced
  • 1/4 c
    kalamata (greek) olives, quartered
  • 4 oz
    feta cheese, crumbled or diced
  • 2 clove
    garlic, diced very fine
  • 2 Tbsp
    bragg's olive oil
  • 2 Tbsp
    bragg's apple cider vinegar
  • 1/4 c
    fresh basil, chopped fine
  • salt and pepper to taste

How To Make quinoa salad - mediterranean style lisa's version

    Mix all the above ingredients together in a large mixing bowl. Allow to "marry" overnight.
