So elegant to look at, so yummy to eat and so easy to make. Goes well w/ any chicken dish, or eat alone as a lunch.

Ingredients

  • 4 - good sized beets, scrubbed, trimmed, cut into 1/2
  • 1/3 cup walnuts, chopped
  • 3 tablespoons pure maple syrup
  • 1 - 10 oz pkg mixed baby greens
  • 1/2 cup frozen orange juice, thawed
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil, extra virgin
  • 2 ounces soft goat cheese

How To Make dressed up easy beet & goat cheese salad

  • Step 1
    Place beets in sauce pan, cover w/ water. Boil 20-30 mins, or until tender. Drain, cool and cut into cubes.
  • Step 2
    Place walnuts in dry skillet, over medium-low heat, cook until almost toasted. Stir in maple syrup. Cook, stirring, until coated. Remove pan from heat.
  • Step 3
    In bowl, whisk together orange juice, vinegar and oil. Place baby greens on 4 plates. Divide walnuts evenly among plates. Place beets over greens. Dab each plate w/ goat cheese and drizzle w/ dressing.
