Ingredients
- 4 - good sized beets, scrubbed, trimmed, cut into 1/2
- 1/3 cup walnuts, chopped
- 3 tablespoons pure maple syrup
- 1 - 10 oz pkg mixed baby greens
- 1/2 cup frozen orange juice, thawed
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil, extra virgin
- 2 ounces soft goat cheese
How To Make dressed up easy beet & goat cheese salad

Step 1Place beets in sauce pan, cover w/ water. Boil 20-30 mins, or until tender. Drain, cool and cut into cubes.

Step 2Place walnuts in dry skillet, over medium-low heat, cook until almost toasted. Stir in maple syrup. Cook, stirring, until coated. Remove pan from heat.

Step 3In bowl, whisk together orange juice, vinegar and oil. Place baby greens on 4 plates. Divide walnuts evenly among plates. Place beets over greens. Dab each plate w/ goat cheese and drizzle w/ dressing.
