    good sized beets, scrubbed, trimmed, cut into 1/2
  • 1/3 c
    walnuts, chopped
  • 3 Tbsp
    pure maple syrup
  • 1
    10 oz pkg mixed baby greens
  • 1/2 c
    frozen orange juice, thawed
  • 1/4 c
    balsamic vinegar
  • 1/2 c
    olive oil, extra virgin
  • 2 oz
    soft goat cheese

How to Make Dressed up easy beet & goat cheese salad


  1. Place beets in sauce pan, cover w/ water. Boil 20-30 mins, or until tender. Drain, cool and cut into cubes.
  2. Place walnuts in dry skillet, over medium-low heat, cook until almost toasted. Stir in maple syrup. Cook, stirring, until coated. Remove pan from heat.
  3. In bowl, whisk together orange juice, vinegar and oil. Place baby greens on 4 plates. Divide walnuts evenly among plates. Place beets over greens. Dab each plate w/ goat cheese and drizzle w/ dressing.
