good sized beets, scrubbed, trimmed, cut into 1/2
1/3 c
walnuts, chopped
3 Tbsp
pure maple syrup
10 oz pkg mixed baby greens
1/2 c
frozen orange juice, thawed
1/4 c
balsamic vinegar
1/2 c
olive oil, extra virgin
2 oz
soft goat cheese

How to Make Dressed up easy beet & goat cheese salad


  • 1Place beets in sauce pan, cover w/ water. Boil 20-30 mins, or until tender. Drain, cool and cut into cubes.
  • 2Place walnuts in dry skillet, over medium-low heat, cook until almost toasted. Stir in maple syrup. Cook, stirring, until coated. Remove pan from heat.
  • 3In bowl, whisk together orange juice, vinegar and oil. Place baby greens on 4 plates. Divide walnuts evenly among plates. Place beets over greens. Dab each plate w/ goat cheese and drizzle w/ dressing.
