potato salad surprise
This is a great recipe ;I forgot about this one..I was talking to my mom on the phone and she mentioned she wished she had some of this salad she used to make when my sisters and I were young..She gave me the recipe over the phone...I made this for dinner today along with crock pot pulled chicken BBQ..that was awesome!.... This salad is great to serve with any BBQ,..hot dogs, burgers, brisket ---- Note; feel free to add a little of your favorites to the potato mixture, like celery, radish,onion,,etc

Ingredients
- 1 tablespoon apple cider vinegar
- 1 small envelope good seasons milk italian salad dressing powder
- 4 cups cooked, diced cold potatoes,al dente
- 3 large hard boiled eggs,diced or chopped
- 8 slices crisp microwaved pre-cooked bacon,crumbled
- 3 ounces package lemon jello
- 1 cup boiling water
- 1/4 cup cold water
- 2 cups mayonnaise
How To Make potato salad surprise

Step 1Combine vinegar and Italian dressing mix dry in a large bowl. Add cold potatoes, diced eggs and bacon. Chill for about 45 minutes.

Step 2Dissolve jello in boiling water; add cold water.

Step 3Blend in mayonnaise. Chill until thick.(when knife leaves an impression when drawn through.

Step 4Add potato mixture. Pour into a 6 cup mold or nice bowl. Chill until firm- about 4 hours.

Step 5Unmold onto lettuce leaves and trim with carrot sticks.
