Potato Salad Rhonda's
3-4 Tbspmayo any kind *tip it is more flavorful to use as less mayo as possible*
1/8 cminced onion
7black olives minced
1/2 stalk(s)minced celery
dash(es)salt (to taste)
·black pepper (to taste)
·dill weed (to taste) (optional) but it makes it delicious
How to Make Potato Salad Rhonda's
- Boil Potato on the Stove on medium heat until you can pierce with fork and it is done. Set aside and let it cool down until warm. Then cut into small bite size cubes.
- Mince Olives, Onion, & Celery and combine in a bowl with the warm potatoes.
- Add dashes of Salt, Black Pepper, & Dill to suit your taste. Careful with the salt.
- Add just enough Mayonaise to fold into the potatoes. I find that making any salad with mayo tastes better when you use just enough to mix. You then can taste the flavors of all the ingredients and it is not over-powered by mayo. Mix and refrigerate for 2 hrs for enhanced flavor combining.
