Potato salad

Ingredients

6potatoes
-
1onion chopped
-
1/2 cmayonnaise
-
1/4 csour cream
-
1 Tbspyellow mustard
-
3 - Tbsppickle relish
-
2 Tbspcapers
-
2hard boiled eggs *optional
-
pinchpepper
-
1/4 cvinegar
-
2 tspsugar
-
1/2 tspdill, dried
How to Make Potato salad
- Boil potatoes whole for 15 minutes. You want them tender but not fully cooked through . Should be able to pierce with fork with some easy. Over cook it tends to end up more of a mash.
- While potatoes boil chop onion and place onion in a big bowl .. sprinkle sugar and dill over and pour vinegar on mix .. Set aside
- Once potatoes are cooked and cooled enough to handle. ( I pour off hot water and cover them with cold water. They tend to peel easier). Peel potato and cut into no smaller then 1 inch chunks. Place in bowl with onions
- Gently toss potatoes in vinegar mix ( this helps potato to not fall apart) and then add mayo. Sour cream. yellow mustard . Relish. Campers and fold in to mix
- Add chopped eggs and fold in
- Refrigerate to chill.
