Ingredients

  • 2 lb
    new red potatoes
  • 5
    finely chopped green onions
  • DRESSING INGREDIENTS

  • 1 c
    mayonnaise
  • 2 tsp
    dijon mustard
  • ·
    salt and pepper to taste
  • 1/2 c
    sour cream
  • 1 Tbsp
    dill

How to Make New Potato Salad

Step-by-Step

  1. Cook potatoes.
  2. Combine all dressing ingredients.
  3. Stir in the chopped green onions. Slice potatoes (leave skins on) about 1/4 inch thick.
  4. Place in a large bowl and fold in the dressing.
  5. Serve chilled.
  6. Best made the day before so the flavors have a chance to mingle.
