Ingredients For mediterranean potato salad

2 lbred skinned potatoes

1green pepper or mult-colored peppers minced

1cucumber sliced and quartered

1/2 csliced red onion

8 ozfeta cheese or gorgonzola

1lemon juiced

1/2 citalian style salad dressing

salt and pepper to taste
How To Make mediterranean potato salad

1Bring a large pot of salted water to a boil; add potatoes, cook until tender but still firm, about 15 minutes. Drain, cool and chop

2In a large bowl, combine the potatoes, peppers, cucumber, red onion ad cheese.

3Whisk together lemon juice, salad dressing, salt and pepper; pour over salad and toss.
