This is a nice change from traditional potato salad. It is very light and great for summer time picnics.

Ingredients

  • 2 pounds red skinned potatoes
  • 1 - green pepper or mult-colored peppers minced
  • 1 - cucumber sliced and quartered
  • 1/2 cup sliced red onion
  • 8 ounces feta cheese or gorgonzola
  • 1 - lemon juiced
  • 1/2 cup italian style salad dressing
  • - salt and pepper to taste

How To Make mediterranean potato salad

  • Step 1
    Bring a large pot of salted water to a boil; add potatoes, cook until tender but still firm, about 15 minutes. Drain, cool and chop
  • Step 2
    In a large bowl, combine the potatoes, peppers, cucumber, red onion ad cheese.
  • Step 3
    Whisk together lemon juice, salad dressing, salt and pepper; pour over salad and toss.
