This is a nice change from traditional potato salad. It is very light and great for summer time picnics.

2 lb
red skinned potatoes
green pepper or mult-colored peppers minced
cucumber sliced and quartered
1/2 c
sliced red onion
8 oz
feta cheese or gorgonzola
lemon juiced
1/2 c
italian style salad dressing
salt and pepper to taste

How to Make Mediterranean Potato Salad


  • 1Bring a large pot of salted water to a boil; add potatoes, cook until tender but still firm, about 15 minutes. Drain, cool and chop
  • 2In a large bowl, combine the potatoes, peppers, cucumber, red onion ad cheese.
  • 3Whisk together lemon juice, salad dressing, salt and pepper; pour over salad and toss.
