Ingredients
- 2 pounds red skinned potatoes
- 1 - green pepper or mult-colored peppers minced
- 1 - cucumber sliced and quartered
- 1/2 cup sliced red onion
- 8 ounces feta cheese or gorgonzola
- 1 - lemon juiced
- 1/2 cup italian style salad dressing
- - salt and pepper to taste
How To Make mediterranean potato salad

Step 1Bring a large pot of salted water to a boil; add potatoes, cook until tender but still firm, about 15 minutes. Drain, cool and chop

Step 2In a large bowl, combine the potatoes, peppers, cucumber, red onion ad cheese.

Step 3Whisk together lemon juice, salad dressing, salt and pepper; pour over salad and toss.
