J's Sweet Potato Salad

Sweet Potato Salad sounded interesting so I tried it. We thought it was pretty good. I made some changes to the original recipe and it is always well received at pot-lucks. In fact I just finished a batch for a pot-luck this evening.

  • 4 small
    sweet potatoes
  • 1/4 c
  • 1 Tbsp
  • 4
    celery stalks, chopped
  • 1 medium
    bell pepper, chopped
  • 1 c
    fresh pineapple, chopped
  • 3
    green onions, chopped fine
  • ·
    salt and pepper
  • 1/2 c
    coarsely chopped toasted pecans
  • 1/2 c
    golden raisins
  • ·
    chopped fresh chives

How to Make J's Sweet Potato Salad


  1. Preheat oven to 400°F. Wrap each sweet potato in foil and bake for 1 hour. Unwrap; let cool. Peel; cut into 3/4-inch chunks.
  2. In a large bowl, mix mayonnaise and mustard. Add sweet potatoes, celery, red pepper, pineapple, and scallions; toss gently. Season to taste with salt and pepper. Cover and refrigerate about 1 hour.
  3. Fold in pecans and raisins and sprinkle with chives.
