greek potato salad with feta cheese
I have this easy potato salad and have been making it for the past 40 years. I found it in a Gourmet magazine I was subscribed to back then. Hope you enjoy.

Ingredients
- 1 1/2 pounds potatoes, quartered lengthwise & cut into bite size
- 1/2 cup fresh lemon juice
- 1 red bell pepper, roasted & diced
- 1/2 cup pitted black olives
- 3 scallions, minced
- 1 tablespoon feta cheese mashed with a fork
- 3/4 teaspoon dried oregano
- 1/2 cup olive oil
- salt & pepper
How To Make greek potato salad with feta cheese

Step 1Peel & cut potatoes in large bite size pieces. Boil for about 10 minutes or just tender. Drain and transfer them to a large bowl.

Step 2Toss the potatoes with 2 Tbsp of lemon juice and salt to taste. Let them cool and then add the red pepper, the olives and the scallions.

Step 3In a jar pour in the remaining 2 Tbsp lemon juice, the oregano, the feta cheese and the olive oil. Shake well until dressing is emulsified.

Step 4Pour the dressing over the salad, toss and season it with salt & pepper. The potato salad keeps, covered and chilled, overnight. Serve the potato salad at room temperature. KALI OREXI: ENJOY!
