greek potato salad with feta cheese

I have this easy potato salad and have been making it for the past 40 years. I found it in a Gourmet magazine I was subscribed to back then. Hope you enjoy.

Ingredients

  • 1 1/2 pounds potatoes, quartered lengthwise & cut into bite size
  • 1/2 cup fresh lemon juice
  • 1 red bell pepper, roasted & diced
  • 1/2 cup pitted black olives
  • 3 scallions, minced
  • 1 tablespoon feta cheese mashed with a fork
  • 3/4 teaspoon dried oregano
  • 1/2 cup olive oil
  • salt & pepper

How To Make greek potato salad with feta cheese

  • Step 1
    Peel & cut potatoes in large bite size pieces. Boil for about 10 minutes or just tender. Drain and transfer them to a large bowl.
  • Step 2
    Toss the potatoes with 2 Tbsp of lemon juice and salt to taste. Let them cool and then add the red pepper, the olives and the scallions.
  • Step 3
    In a jar pour in the remaining 2 Tbsp lemon juice, the oregano, the feta cheese and the olive oil. Shake well until dressing is emulsified.
  • Step 4
    Pour the dressing over the salad, toss and season it with salt & pepper. The potato salad keeps, covered and chilled, overnight. Serve the potato salad at room temperature. KALI OREXI: ENJOY!
