4 smallred potatoes, cubed

1/3 cmayonnaise

1hard cooked egg, chopped

2 Tbspchopped celery

2 Tbspchopped carrot

2 Tbspchopped red onion

2 tspsweet pickle relish

1/8 tspsalt

1/8 tsppepper
How to Make Creamy Potato Salad
- Place the potatoes in a microwave-safe bowl; add water. Cover and microwave on high for 4-5 minutes or until tender; drain and rinse in cold water.
- In a bowl, combine the remaining ingredients. Add potatoes and gently toss to coat. Cover and refrigerate until chilled.
