Give me a word, any word and I will show you how it is Greek...LOL! Great quote from a good movie but this isn't a movie, but a recipe I created for a Greek pasta salad with an easy homemade dressing.

Ingredients

  • GREEK DRESSING
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 4 teaspoons cavender's all purpose greek seasoning
  • 1/8 cup balsamic vinegar
  • 1/4 cup apple cider vinegar
  • 2 teaspoons granulated garlic or garlic powder
  • 2 tablespoons honey
  • 2 tablespoons tahini
  • 3 teaspoons olive oil
  • 1/4 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 cup grated parmesan cheese
  • SALAD
  • 1 pound farfalle (bow tie) pasta
  • 12 ounces marinated artichoke hearts, diced
  • 2 cans large pitted black olives, halfed
  • 12 ounces feta cheese, crumbled
  • 16 ounces baby spinach
  • 2 pints grape tomatoes, halfed
  • 2 pints mushrooms, quartered
  • 6 ounces sun dried tomatoes, chopped
  • 1 large purple onion, sliced thin
  • 1 large english cucumbers, seeded and diced
  • 2 large red peppers, sliced
  • 1 teaspoon fresh mint, chopped

How To Make farfalle of arete (greek pasta salad)

  • Step 1
    FOR DRESSING: Combine all ingredients and whisk together. Taste for salt and pepper and adjust as needed. This will make a lot of dressing, so don't just pour it over the salad.
  • Step 2
    Cook, drain, and cool pasta.
  • Step 3
    Add pasta, spinach, and all other vegetables and cheese to a large bowl. Toss to combine ingredients evenly.
  • Step 4
    Add dressing, about a half cup and toss. This is where you decide how much or how little dressing you desire.
  • Step 5
    You could add grilled chicken, grilled shrimp, or grilled tenderloin to make this a main dish. This is a very cool dish for those hot summer days.
