Light, refreshing salad for summertime. Great for lunch or a light dinner. Prep time includes chilling time.

Ingredients

  • 1 medium sweet red pepper, cut into julienne strips
  • 1 tablespoon sesame oil
  • 3 - green onions, sliced
  • 1 teaspoon fresh ginger, minced
  • 1 clove garlic, minced
  • 1/4 teaspoon crushed red pepper
  • 4 cups cooked fine egg noodles, chilled
  • 4 cups torn romaine lettuce
  • 1 pound fresh crabmeat, drained and flaked
  • 1/4 cup soy sauce
  • 1/4 cup red wine vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon freshly ground pepper

How To Make crab and noodle salad

  • Step 1
    Saute sweet red pepper in sesame oil in a large skillet for 2 minutes. Add green onions, ginger, garlic, and crushed red pepper, and saute 1 minute.
  • Step 2
    Combine chilled noodles, red pepper mixture, lettuce, and crabmeat in a large salad bowl; toss gently.
  • Step 3
    Combine soy sauce and remaining ingredients in a small bowl, stirring with a wire whisk. Pour the dressing over the noodle mixture; toss gently to combine. Cover and chill for 30 minutes. Toss again just before serving.
