This is a great summer salad for any BBQ or picnic.

Ingredients

  • 8 ounces farfalle pasta
  • 1 tablespoon olive oil
  • 1 cup diced deli ham
  • 1 cup reduced-fat, shredded cheddar cheese
  • 1 large tomato, diced
  • 1/4 cup chopped fresh parsley
  • 6 ounces organic, mixed greens
  • 2 - hard cooked eggs, finely chopped.
  • pinch each salt and pepper
  • 2 tablespoons dijon mustard
  • 2 tablespoons cider vinegar
  • 1 tablespoon light brown sugar
  • 1/2 teaspoon salt
  • 1/2 cup olive oil

How To Make chef's style pasta salad

  • Step 1
    Cook pasta as directed, drain. Place in bowl, toss w/ 1 tbsp oil. In another bowl, whisk together mustard, vinegar, brown sugar and salt. Slowly whisk in 1/2 cup oil.
  • Step 2
    Add the dressing to pasta, toss to coat evenly. Add ham, cheese, tomato, pasrley and mixed greens.
  • Step 3
    Toss all ingredients gently to coat. Transfer to lg serving bowl. Sprinkle w/ chopped eggs. Season w/ salt and pepper.
