This is a great summer salad for any BBQ or picnic.

Ingredients

  • 8 oz
    farfalle pasta
  • 1 Tbsp
    olive oil
  • 1 c
    diced deli ham
  • 1 c
    reduced-fat, shredded cheddar cheese
  • 1 large
    tomato, diced
  • 1/4 c
    chopped fresh parsley
  • 6 oz
    organic, mixed greens
  • 2
    hard cooked eggs, finely chopped.
  • pinch
    each salt and pepper
  • 2 Tbsp
    dijon mustard
  • 2 Tbsp
    cider vinegar
  • 1 Tbsp
    light brown sugar
  • 1/2 tsp
    salt
  • 1/2 c
    olive oil

How to Make Chef's style pasta salad

Step-by-Step

  1. Cook pasta as directed, drain. Place in bowl, toss w/ 1 tbsp oil. In another bowl, whisk together mustard, vinegar, brown sugar and salt. Slowly whisk in 1/2 cup oil.
  2. Add the dressing to pasta, toss to coat evenly. Add ham, cheese, tomato, pasrley and mixed greens.
  3. Toss all ingredients gently to coat. Transfer to lg serving bowl. Sprinkle w/ chopped eggs. Season w/ salt and pepper.
