I ate this for a late afternoon lunch and thought it was good. Later on, when my husband got home and was very hungry, this is what I fed him until dinner was done. He loved this, and I did not expect him to like it.

Spinach and pasta add heartiness to this Caprese spinach pasta salad, but it's still light and refreshing. The smell of sweet and fragrant basil is heavenly. With juicy and sweet tomatoes and creamy mozzarella, it's a delicious side dish or snack for summer. Add some grilled chicken for a complete meal.

Ingredients

  • 4 - 6 ounces pasta
  • 4 small fresh tomatoes
  • 4 - 6 slices fresh mozzarella cheese
  • 1 can black olives, crushed slightly (4 oz)
  • 1 bunch fresh spinach
  • 1 - handful fresh basil
  • 1/4 - 1/3 cup good extra-virgin olive oil
  • salt, to taste
  • pepper, to taste

How To Make caprese spinach pasta salad

  • Boil pasta per package directions.
    Step 1
    Cook 1 cup of pasta per box directions.
  • Drain pasta once cooked.
    Step 2
    Once cooked, drain and cool completely.
  • Chop tomatoes.
    Step 3
    Dice tomatoes.
  • Add tomatoes, mozzarella, spinach, and black olives to a bowl.
    Step 4
    Add to a bowl with spinach, mozzarella, and black olives.
  • Chop fresh basil.
    Step 5
    Chop the basil.
  • Add basil to the bowl.
    Step 6
    Add to the ingredients.
  • Add cooled pasta.
    Step 7
    When cooled, add the pasta.
  • Drizzle olive oil.
    Step 8
    Toss. Drizzle olive oil over the top.
  • Toss again and add salt and pepper.
    Step 9
    Toss again. Add salt and pepper to taste.
