Betty's Avocado, Pasta and 4 Bean Salad

·4 cups cooked pasta, whatever shape you like (measurement doesn't need to be perfect)
·1 tin of 4 bean mix, rinsed and well drained
·2 avocados, diced - not too small
·1 cup baby spinach leaves **optional
·2 tablespoon good quality olive oil
·3 teaspoons good quality balsamic vinegar
·salt and pepper to taste (i always add plenty of pepper)
How to Make Betty's Avocado, Pasta and 4 Bean Salad
- In a medium-large bowl combine the cold cooked pasta and other salad ingredients.
- In a small bowl add the dressing ingredients and whisk with a fork (or use a screw top lid jar and shake to combine).
- Pour dressing over the salad and gently stir to mix. Over mixing will break the avocado making is mushy.
