betty's avocado, pasta and 4 bean salad

Left over plain pasta from last night? This is a BBQ or perfect light meal. Make as close to serving time as possible. Tins of 4 bean mix are popular in Australia and contain: Cannellini beans, Garbanzio beans (chick peas), Kidney beans and Lima beans or butter beans depending on the company. Cook time is time to cook pasta. Rinse pasta in cold water and shake colander well or the dressing will slide off.

Ingredients For betty's avocado, pasta and 4 bean salad

  • 4 cups cooked pasta, whatever shape you like (measurement doesn't need to be perfect)
  • 1 tin of 4 bean mix, rinsed and well drained
  • 2 avocados, diced - not too small
  • 1 cup baby spinach leaves **optional
  • DRESSING
  • 2 tablespoon good quality olive oil
  • 3 teaspoons good quality balsamic vinegar
  • salt and pepper to taste (i always add plenty of pepper)

How To Make betty's avocado, pasta and 4 bean salad

    In a medium-large bowl combine the cold cooked pasta and other salad ingredients.

    In a small bowl add the dressing ingredients and whisk with a fork (or use a screw top lid jar and shake to combine).

    Pour dressing over the salad and gently stir to mix. Over mixing will break the avocado making is mushy.
