Fresh, flavorful and packed with antioxidants, this is a delicious healthy meal to enjoy!

Ingredients

  • DRESSING
  • 2/3 cup plain yogurt
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red onions, finely chopped
  • 1 tablespoon pomegranate molasses
  • 1 tablespoon honey
  • 1/2 teaspoon ground rosemary
  • freshly ground black pepper, to taste (i always use mixed peppercorns)
  • 1/8 teaspoon ground himalayan sea salt
  • SALAD
  • 4-5 large leaves kale, washed and drained
  • 1 large carrot, peeled
  • 1 medium grapefruit, peeled, pith removed and segmented
  • 1 large mandarin, peeled, pith removed and segmented
  • 1 medium navel orange, peeled, pith removed and segmented
  • 1 large kiwi fruit, skin removed and wedged
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons pomegranate seeds
  • 2 tablespoons slivered almonds, toasted

How To Make winter citrus salad

  • Step 1
    To make the dressing: In a mixing bowl, combine all ingredients and whisk until well blended. Transfer to the refrigerator for 2 hours.
  • Step 2
    Place all the ingredients on a plate in order; drizzle dressing over sprinkle toasted slivered almonds. Serve 2
