tomatoe and sumac salad
This lovely Turkish salad is wonderful served with olives, hummus, bread and feta cheese. It is a great accompaniment to most dishes, the red onions and tomatoes work well with the tangy sumac.

Ingredients
- - 3 medium tomatoes, quartered and roughly chopped
- - 1 red onion, halved and thinly sliced
- - 1 bunch of flat leaf parsley, roughly chopped
- - juice of 1 lemon
- - ½ teaspoon sea salt
- - ½ tsp white sugar (optional)
- - 10 ml/2 teaspoon ground sumac
- - 15ml/1 tablespoon extra virgin olive oil
- - ½ teaspoon paprika flakes
- - freshly ground black pepper to taste
How To Make tomatoe and sumac salad

Step 1Mix the sumac, salt and (sugar - if using together)

Step 2Use your hands to rub and work the sumac mixture into the onion slices. (this infuses flavor and softens the onions)

Step 3Stir in the chopped tomatoes, parsley and paprika flakes and mix well.

Step 4Whisk the oil and lemon juice well and then pour over the salad.

Step 5Season with salt and freshly ground black pepper.
