This lovely Turkish salad is wonderful served with olives, hummus, bread and feta cheese. It is a great accompaniment to most dishes, the red onions and tomatoes work well with the tangy sumac.

Ingredients

  • - 3 medium tomatoes, quartered and roughly chopped
  • - 1 red onion, halved and thinly sliced
  • - 1 bunch of flat leaf parsley, roughly chopped
  • - juice of 1 lemon
  • - ½ teaspoon sea salt
  • - ½ tsp white sugar (optional)
  • - 10 ml/2 teaspoon ground sumac
  • - 15ml/1 tablespoon extra virgin olive oil
  • - ½ teaspoon paprika flakes
  • - freshly ground black pepper to taste

How To Make tomatoe and sumac salad

  • Step 1
    Mix the sumac, salt and (sugar - if using together)
  • Step 2
    Use your hands to rub and work the sumac mixture into the onion slices. (this infuses flavor and softens the onions)
  • Step 3
    Stir in the chopped tomatoes, parsley and paprika flakes and mix well.
  • Step 4
    Whisk the oil and lemon juice well and then pour over the salad.
  • Step 5
    Season with salt and freshly ground black pepper.
