starter essentials: avocado bliss
Had some ripe avocados left from an event I hosted, and since I HATE to waste food, I came up with a new starter, and served it to my guests for Sunday brunch. It was a great success. I only have the final photo; however, it is easy/peasy to assemble. All you need is a ripe avocado, and a few other bits-and-bobs. This could be served as a starter for a nice dinner, or by itself with a nice glass of chardonnay. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1 cup spring salad greens
- 1 large ripe avocado
- 2 scoops cottage cheese
- balsamic reduction, as needed
- lemon juice, freshly squeezed, as needed
- SPICES (PICK AND CHOOSE)
- salt, kosher variety
- black pepper, freshly ground
- hungarian paprika, sweet variety
- cayenne pepper
- anything else you fancy

Step 2Removing the seed from an avocado. Avocados have a tough exterior skin, and when they are ripe, attempting to cut through them with a dull knife can turn the flesh into a right mess. So, the first thing is to have a good sharp knife, and cut, going down to the seed, and then moving around until it is cut in half. Then rotate the two halves in opposite directions, until they separate. One of the halves will have the seed. What I usually do is place the avocado in my hand and use a kitchen knife to give the seed a whack. The blade embeds itself into the seed, you give it a twist, and out it comes… Easy/Peasy. Well, unless you miss the seed and slice open your hand… In that case you will need a new avocado…

Step 3Gather your ingredients (mise en place).

Step 4Cut the avocado in half (lengthwise) and remove the seed. Using a spoon, carefully scoop out the two avocado halves, leaving them intact (discard the skins). Lay some lettuce on a small plate, nest one of the avocado halves in the middle, and sprinkle with a bit of lemon juice. Add a small scoop of cottage cheese in the hole created by the seed. Drizzle with the balsamic reduction, and sprinkle on a few spices (salt and pepper are a must).
